Asparagus & Brie Grilled Cheese (Print Version)

Grilled asparagus and melted Brie between buttery sourdough bread makes an elegant, vegetarian sandwich ready in 25 minutes.

# What You'll Need:

→ Vegetables

01 - 8 to 10 thin asparagus spears, trimmed
02 - 1 teaspoon olive oil
03 - Pinch of salt
04 - Pinch of black pepper

→ Dairy

05 - 4 ounces Brie cheese, sliced
06 - 2 tablespoons unsalted butter, softened

→ Bread

07 - 4 slices crusty sourdough or country bread

# How to Make It:

01 - Preheat a grill pan or skillet over medium-high heat. Toss asparagus spears with olive oil, salt, and pepper. Grill or sauté for 3 to 4 minutes, turning occasionally, until just tender and lightly charred. Remove from heat.
02 - Butter one side of each bread slice evenly with softened butter.
03 - Place two slices of bread, buttered side down, on a clean surface. Layer with half the Brie cheese, followed by the grilled asparagus, then the remaining Brie. Top with the other bread slices, buttered side up.
04 - Heat a large skillet or griddle over medium heat. Add the sandwiches and cook for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
05 - Remove from heat, let rest for 1 minute, then slice diagonally and serve warm.

# Additional Tips::

01 -
  • The asparagus stays tender with a slight char that adds just enough smokiness to balance the rich, creamy Brie.
  • It comes together in under half an hour but tastes like something youd order at a cafe with cloth napkins.
  • You can make it any time of year, but it feels especially right when asparagus is in season and you want something lighter than a heavy grilled cheese.
02 -
  • Dont skip the resting step after grilling, or the cheese will run everywhere and the first bite will burn your tongue.
  • Medium heat is your friend here, if the pans too hot the bread will toast before the Brie has a chance to melt, and youll end up with a sad, crunchy sandwich with cold cheese in the middle.
  • If your asparagus spears are thick, slice them in half lengthwise before grilling so they cook faster and layer more evenly in the sandwich.
03 -
  • Let the Brie sit out for 15 minutes before you start cooking, it melts faster and more smoothly when its not ice cold from the fridge.
  • If your bread is sliced thin, use just one slice per side and pile the asparagus and cheese higher, it makes a better ratio and the sandwich holds together more easily.
